- 2 cups broccoli florets, finely chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- Vegetable oil for frying
Instructions
- Place the chopped broccoli in a bowl and microwave for 2 minutes until slightly tender. Drain any excess water completely.
- In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- In a separate bowl, whisk the eggs and milk together.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Stir in the drained broccoli, shredded cheese, and minced garlic until evenly distributed.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon. Work in batches to avoid overcrowding the pan.
- Fry for 3 to 4 minutes per side, until golden brown and cooked through.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
Notes
- You can substitute cheddar cheese with Monterey Jack or Gruyere for a different flavor.
- For crispier fritters, ensure your oil is at the correct temperature before adding the batter.
