Description
Crispy baked chips made from thinly sliced yellow squash seasoned with garlic and Parmesan cheese.

- 2 medium yellow squash
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 300 degrees Fahrenheit. Line two baking sheets with parchment paper.
- Slice the yellow squash very thinly, about 1/16 inch thick. A mandoline slicer works best for uniform thickness.
- In a large bowl, toss the squash slices with olive oil until lightly coated.
- In a small bowl, mix together the Parmesan cheese, garlic powder, salt, and pepper.
- Sprinkle the cheese mixture evenly over the squash slices, tossing gently to coat.
- Arrange the squash slices in a single layer on the prepared baking sheets. Do not overlap them.
- Bake for 20 minutes. Flip the chips over.
- Bake for another 15 to 25 minutes, watching closely, until the edges are brown and the chips are crisp. Cooking time varies based on slice thickness.
- Remove from the oven and let cool completely on the baking sheets. They will crisp up more as they cool.
Notes
- For extra crispness, you can bake them in batches at a lower temperature (250 degrees F) for a longer time.
- If you do not have garlic powder, use 1 clove of fresh garlic, minced very finely, and toss it with the oil.
