Simple recipe for roasting mixed vegetables with garlic and Parmesan cheese.

- 1 lb mixed vegetables (broccoli, carrots, zucchini)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop all vegetables into bite-sized pieces.
- In a large bowl, toss the vegetables with olive oil and minced garlic until evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 15 minutes.
- Remove the baking sheet from the oven and sprinkle the vegetables with Parmesan cheese, salt, and pepper.
- Return to the oven and roast for another 5 to 10 minutes, or until vegetables are tender and cheese is lightly browned.
- Serve immediately.
Notes
- You can substitute other firm vegetables like Brussels sprouts or cauliflower.
- For crispier edges, avoid overcrowding the baking sheet.
