Garlic Herb Grilled Potatoes in Foil

Description

Simple grilled potatoes seasoned with garlic and herbs, cooked in foil packets.


Ingredients

  • 2 lbs small potatoes, quartered
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 sheets heavy-duty aluminum foil

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, combine the quartered potatoes, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Divide the potato mixture evenly among the four sheets of aluminum foil.
  4. Fold the edges of each foil sheet together to create a sealed packet, leaving a little room for steam.
  5. Place the foil packets directly on the grill grates.
  6. Grill for 25 to 35 minutes, turning the packets every 10 minutes, until the potatoes are tender when pierced with a fork.
  7. Carefully open the packets (steam will escape) and serve immediately.

Notes

  • You can substitute fresh herbs for dried herbs, using double the amount specified.
  • For extra flavor, add a tablespoon of grated Parmesan cheese to each packet before sealing.
