Description
A simple recipe for chicken breast cooked with fresh broccoli and spinach, seasoned with garlic.
Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 1 head broccoli, cut into florets
- 5 oz fresh spinach
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add the broccoli florets to the same skillet. Cook for 3 minutes, stirring occasionally.
- Add the minced garlic and chicken broth to the skillet. Cover and cook for 2 minutes until broccoli is slightly tender.
- Return the chicken to the skillet. Add the spinach and cook until the spinach wilts, about 1-2 minutes.
- Stir everything together and serve immediately.
Notes
- You can substitute chicken thighs for chicken breast.
- Use vegetable broth instead of chicken broth for a different flavor.
