Description

A simple recipe for chicken breast cooked with fresh broccoli and spinach, seasoned with garlic.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 head broccoli, cut into florets
  • 5 oz fresh spinach
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add the broccoli florets to the same skillet. Cook for 3 minutes, stirring occasionally.
  5. Add the minced garlic and chicken broth to the skillet. Cover and cook for 2 minutes until broccoli is slightly tender.
  6. Return the chicken to the skillet. Add the spinach and cook until the spinach wilts, about 1-2 minutes.
  7. Stir everything together and serve immediately.

Notes

  • You can substitute chicken thighs for chicken breast.
  • Use vegetable broth instead of chicken broth for a different flavor.
