Garlic Butter Shrimp and Rice

Description

A simple recipe for shrimp cooked in garlic butter served over cooked rice.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 cups cooked white rice
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic brown.
  3. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque.
  4. Pour in the chicken broth and lemon juice. Bring the liquid to a simmer.
  5. Season with salt and pepper. Stir gently to coat the shrimp.
  6. Remove the skillet from the heat.
  7. Serve the garlic butter shrimp immediately over the cooked white rice.
  8. Garnish with chopped fresh parsley.

Notes

  • You can use frozen shrimp, but thaw them completely and pat them dry before cooking.
  • For extra flavor, add a pinch of red pepper flakes with the garlic.
