Flavorful Roasted Garlic Mashed Cauliflower

Description

A simple and delicious side dish of mashed cauliflower infused with roasted garlic.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 head garlic, top sliced off
  • 2 tablespoons olive oil, divided
  • 1/4 cup milk or cream
  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cauliflower florets on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat.
  3. Place the garlic head on a small piece of aluminum foil. Drizzle with the remaining 1 tablespoon of olive oil and wrap tightly.
  4. Roast the cauliflower for 20-25 minutes, or until tender and slightly browned. Roast the garlic for the same amount of time, or until soft.
  5. Remove the roasted garlic cloves from their skins.
  6. Transfer the roasted cauliflower to a food processor or a large bowl. Add the roasted garlic, milk or cream, and butter.
  7. Mash the cauliflower and garlic until smooth and creamy. You can also use an immersion blender for a smoother texture.
  8. Season with additional salt and pepper to your preference.
  9. Serve hot.

Notes

  • For a richer flavor, use heavy cream instead of milk.
  • Add a pinch of nutmeg for an extra layer of flavor.
  • You can substitute other herbs like chives or parsley for garnish.
