Description
A simple and delicious side dish of mashed cauliflower infused with roasted garlic.
Ingredients

- 1 large head cauliflower, cut into florets
- 1 head garlic, top sliced off
- 2 tablespoons olive oil, divided
- 1/4 cup milk or cream
- 2 tablespoons butter
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place the cauliflower florets on a baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat.
- Place the garlic head on a small piece of aluminum foil. Drizzle with the remaining 1 tablespoon of olive oil and wrap tightly.
- Roast the cauliflower for 20-25 minutes, or until tender and slightly browned. Roast the garlic for the same amount of time, or until soft.
- Remove the roasted garlic cloves from their skins.
- Transfer the roasted cauliflower to a food processor or a large bowl. Add the roasted garlic, milk or cream, and butter.
- Mash the cauliflower and garlic until smooth and creamy. You can also use an immersion blender for a smoother texture.
- Season with additional salt and pepper to your preference.
- Serve hot.
Notes
- For a richer flavor, use heavy cream instead of milk.
- Add a pinch of nutmeg for an extra layer of flavor.
- You can substitute other herbs like chives or parsley for garnish.
