- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces fettuccine pasta
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook fettuccine according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add mushrooms and onion to the same skillet. Cook until softened and lightly browned, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in heavy cream and bring to a simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet. Add the cooked fettuccine. Toss to combine and coat everything in the sauce.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a richer flavor, use a mix of mushroom varieties.
- Add a splash of white wine to the skillet after cooking the garlic for an extra layer of flavor.
