Enjoy these easy and delicious chicken tacos topped with a refreshing lime cilantro slaw.

- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1/2 cup chopped fresh cilantro
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken thighs with 1 tbsp olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
- Shred the cooked chicken.
- While chicken bakes, prepare the slaw: In a medium bowl, combine shredded cabbage, chopped cilantro, lime juice, and 1 tbsp olive oil. Season with salt and pepper to taste.
- Warm the tortillas according to package directions.
- Fill each tortilla with shredded chicken and top with lime cilantro slaw.
Notes
- For extra flavor, marinate the chicken for at least 30 minutes before cooking.
- Add diced avocado or a dollop of sour cream for extra richness.
