Description

A quick and easy chicken stir fry noodle recipe perfect for a weeknight dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces dried egg noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine chicken pieces with soy sauce, sesame oil, and cornstarch. Toss to coat and set aside for 10 minutes.
  2. Cook egg noodles according to package directions. Drain and set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add broccoli, red bell pepper, and carrot to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
  6. Return the cooked chicken to the skillet. Add chicken broth and oyster sauce (if using). Bring to a simmer and cook for 1-2 minutes, allowing the sauce to thicken slightly.
  7. Add the cooked noodles to the skillet and toss everything together to coat the noodles with the sauce.
  8. Season with salt and pepper to taste. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the garlic and ginger.
  • Feel free to substitute your favorite stir-fry vegetables.
