A quick and easy chicken stir fry noodle recipe perfect for a weeknight dinner.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces dried egg noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 cup chicken broth
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
Instructions
- In a medium bowl, combine chicken pieces with soy sauce, sesame oil, and cornstarch. Toss to coat and set aside for 10 minutes.
- Cook egg noodles according to package directions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add broccoli, red bell pepper, and carrot to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
- Return the cooked chicken to the skillet. Add chicken broth and oyster sauce (if using). Bring to a simmer and cook for 1-2 minutes, allowing the sauce to thicken slightly.
- Add the cooked noodles to the skillet and toss everything together to coat the noodles with the sauce.
- Season with salt and pepper to taste. Serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes with the garlic and ginger.
- Feel free to substitute your favorite stir-fry vegetables.
