A cheesy and satisfying chicken quesadilla perfect for a quick dinner.
Ingredients

- 1 tablespoon olive oil
- 1 cup cooked shredded chicken
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper and cook until softened, about 5 minutes.
- Stir in shredded chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook for 2-3 minutes until heated through.
- Lay one tortilla flat. Sprinkle half of the cheese over one half of the tortilla.
- Spoon the chicken mixture over the cheese.
- Sprinkle the remaining cheese over the chicken mixture.
- Fold the other half of the tortilla over the filling.
- Repeat with the second tortilla and remaining filling.
- Wipe the skillet clean and heat it over medium heat.
- Carefully place one quesadilla in the skillet. Cook for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from skillet and cut into wedges. Repeat with the second quesadilla.
Notes
- Serve with your favorite toppings like salsa, sour cream, or guacamole.
- For extra crispiness, use a panini press.
