- 4 large flour tortillas
- 6 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked, crumbled breakfast sausage or bacon
- 1/4 cup diced onion
- 1 tablespoon butter or oil
- Salt and pepper to taste
Instructions
- Heat butter or oil in a skillet over medium heat. Add diced onion and cook until soft, about 3 minutes.
- In a bowl, whisk eggs and milk together. Season with salt and pepper.
- Pour egg mixture into the skillet. Cook, stirring occasionally, until eggs are set but still slightly moist.
- Stir in cooked sausage or bacon and shredded cheese until the cheese melts.
- Warm the tortillas according to package directions (microwave or dry skillet).
- Spoon the egg mixture evenly down the center of each warm tortilla.
- Fold in the sides of the tortilla, then roll tightly from the bottom up to form a burrito.
- Serve immediately or wrap individually in foil for later.
Notes
- You can add salsa or hot sauce for extra flavor.
- Use pre-cooked potatoes or black beans for a heartier filling.
- Freeze assembled burritos tightly wrapped for quick future meals.
