Description

A simple method for roasting mixed vegetables until tender and slightly caramelized.


Ingredients

  • 2 cups broccoli florets
  • 2 cups potatoes, cubed

  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place all chopped vegetables in a large bowl.
  3. Drizzle the olive oil over the vegetables.
  4. Sprinkle the salt, pepper, and garlic powder over the vegetables.
  5. Toss everything together until the vegetables are evenly coated.
  6. Spread the coated vegetables in a single layer on a large baking sheet.
  7. Roast for 25 to 35 minutes, stirring halfway through, until the vegetables are tender when pierced with a fork.
