- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices bacon, cooked and crumbled
- 1 cup fresh spinach, chopped
- 1/4 cup shredded cheddar cheese
- 1 teaspoon olive oil
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an oven-safe skillet (about 8 inches).
- In a bowl, whisk together the eggs, milk, salt, and pepper until combined.
- Heat the olive oil in the skillet over medium heat. Add the chopped spinach and cook until wilted, about 2 minutes.
- Distribute the crumbled bacon evenly over the spinach in the skillet.
- Pour the egg mixture over the bacon and spinach. Sprinkle the cheddar cheese on top.
- Cook on the stovetop for 3 to 5 minutes, until the edges begin to set.
- Transfer the skillet to the preheated oven. Bake for 12 to 15 minutes, or until the center is set and the top is lightly golden.
- Remove from the oven and let it cool for 5 minutes before slicing and serving.
Notes
- You can substitute Swiss or Monterey Jack cheese for cheddar.
- Use pre-cooked bacon for faster preparation.
