- 1 block (7 oz) feta cheese
- 4 large eggs
- 2 tablespoons olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- Pinch of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Crusty bread, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Place the block of feta cheese in the center of a small oven-safe skillet or baking dish.
- Drizzle the feta with 1 tablespoon of olive oil and sprinkle with black pepper, oregano, and red pepper flakes if using.
- Bake for 10-12 minutes, or until the feta is softened and slightly golden.
- Carefully make four wells in the softened feta using the back of a spoon.
- Crack one egg into each well.
- Drizzle the remaining 1 tablespoon of olive oil over the eggs and feta.
- Return the dish to the oven and bake for another 8-12 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
- Garnish with fresh parsley.
- Serve immediately with crusty bread for dipping.
Notes
- You can add other Mediterranean ingredients like cherry tomatoes, olives, or spinach to the dish before baking.
