Description
A quick and delicious shrimp pasta dish perfect for a weeknight meal.
Ingredients
Scale
- 1 pound linguine
- 2 tablespoons olive oil
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- Salt and black pepper to taste
Instructions
- Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Add minced garlic and red pepper flakes to the skillet. Cook until fragrant, about 1 minute.
- Pour in white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
- Return shrimp to the skillet. Add cooked linguine, chopped parsley, and lemon juice. Toss to combine.
- If the pasta seems dry, add a little reserved pasta water until it reaches your desired consistency.
- Season with salt and black pepper to taste. Serve immediately.
Notes
- For extra flavor, you can add a tablespoon of butter along with the lemon juice.
- Feel free to add other vegetables like spinach or cherry tomatoes.
