- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 6 cups chicken broth
- 1 1/2 cups cooked chicken, shredded or diced
- 1 cup frozen peas
- 1/2 cup milk
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Season with salt and pepper. Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth until smooth. Bring to a simmer, stirring occasionally.
- Add cooked chicken and frozen peas. Cook until heated through, about 5 minutes.
- Stir in milk and parsley. Heat gently until warmed through; do not boil.
- Serve hot.
Notes
- For a richer flavor, you can use heavy cream instead of milk.
- Serve with crusty bread for dipping.
