Ingredients

  • 2 cups cooked rice, cold
  • 1 cup diced cooked chicken
  • 1/2 cup frozen peas and carrots
  • 2 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 green onion, chopped

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add beaten eggs and scramble until cooked. Remove from skillet and set aside.
  3. Add cooked chicken and frozen peas and carrots to the skillet. Stir-fry for 2-3 minutes until heated through.
  4. Add cooked rice to the skillet. Break up any clumps.
  5. Pour soy sauce over the rice and stir to combine.
