- 2 cups cooked rice, cold
- 1 cup diced cooked chicken
- 1/2 cup frozen peas and carrots
- 2 large eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 green onion, chopped
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add beaten eggs and scramble until cooked. Remove from skillet and set aside.
- Add cooked chicken and frozen peas and carrots to the skillet. Stir-fry for 2-3 minutes until heated through.
- Add cooked rice to the skillet. Break up any clumps.
- Pour soy sauce over the rice and stir to combine.
- Add scrambled eggs and chopped green onion. Stir-fry for another 1-2 minutes until everything is well combined and heated through.
- Serve immediately.
Notes
- For best results, use day-old rice.
- You can add other vegetables like corn, broccoli, or bell peppers.
- Adjust soy sauce to your taste.
