Description

Tender beef tips slow-cooked with savory gravy and served over egg noodles.


Ingredients

  • 2 pounds beef sirloin, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/4 cup cold water
  • 1 pound egg noodles

Instructions

  1. Sear beef tips in olive oil in a skillet over medium-high heat.
  2. Transfer beef to a slow cooker.
  3. Add onion and garlic to the skillet and cook until softened.
  4. Add beef broth, water, soy sauce, Worcestershire sauce, thyme, and pepper to the skillet. Bring to a simmer.
  5. Pour the liquid mixture into the slow cooker with the beef.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. In a small bowl, whisk together flour and cold water to create a slurry.
  8. Stir the slurry into the slow cooker during the last 30 minutes of cooking to thicken the gravy.
  9. Cook egg noodles according to package directions.
  10. Serve beef tips and gravy over cooked noodles.

Notes

  • For a richer flavor, use a chuck roast instead of sirloin.
  • Add your favorite vegetables like carrots or mushrooms along with the onion.
