- 2 pounds beef sirloin, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup water
- 1/4 cup soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1/4 cup cold water
- 1 pound egg noodles
Instructions
- Sear beef tips in olive oil in a skillet over medium-high heat.
- Transfer beef to a slow cooker.
- Add onion and garlic to the skillet and cook until softened.
- Add beef broth, water, soy sauce, Worcestershire sauce, thyme, and pepper to the skillet. Bring to a simmer.
- Pour the liquid mixture into the slow cooker with the beef.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- In a small bowl, whisk together flour and cold water to create a slurry.
- Stir the slurry into the slow cooker during the last 30 minutes of cooking to thicken the gravy.
- Cook egg noodles according to package directions.
- Serve beef tips and gravy over cooked noodles.
Notes
- For a richer flavor, use a chuck roast instead of sirloin.
- Add your favorite vegetables like carrots or mushrooms along with the onion.
- Adjust soy sauce for saltiness preference.
