  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. In a shallow dish, whisk together the flour, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  2. In another shallow dish, beat the eggs.
  3. In a third shallow dish, place the panko breadcrumbs.
  4. Dip each zucchini slice first into the flour mixture, coating both sides.
  5. Next, dip the floured zucchini slice into the beaten eggs, letting any excess drip off.
  6. Finally, press the egg-coated zucchini slice into the panko breadcrumbs, ensuring it is well coated on both sides.
  7. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
  8. Carefully place the breaded zucchini slices in the hot oil in a single layer, working in batches if necessary to avoid overcrowding the pan.
  9. Fry for 2-3 minutes per side, until golden brown and crispy.
  10. Remove the zucchini slices from the skillet and place them on a wire rack set over a baking sheet to drain any excess oil.
  11. Serve immediately.

Notes

  • For extra crispiness, you can bake the breaded zucchini at 400°F (200°C) for 15-20 minutes after breading, flipping halfway through.
