- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- For the Creamy Sauce:
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine flour, salt, pepper, and paprika.
- In another shallow dish, whisk the eggs.
- In a third shallow dish, combine panko breadcrumbs, Parmesan cheese, parsley, and thyme.
- Dredge each chicken piece first in the flour mixture, then dip in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.
- Place the coated chicken pieces on the prepared baking sheet.
- In a small bowl, whisk together the melted butter and olive oil. Drizzle this mixture evenly over the chicken bites.
- Bake for 18-20 minutes, or until the chicken is golden brown and cooked through.
- While the chicken bakes, prepare the sauce. Melt 2 tablespoons of butter in a skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in the heavy cream and chicken broth. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until slightly thickened.
- Stir in 1/4 cup of Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Serve the crispy chicken bites immediately with the creamy sauce for dipping.
Notes
- For extra crispy chicken, you can pan-fry the bites before baking.
- Feel free to add other herbs like rosemary or chives to the breadcrumb mixture.
- The creamy sauce can be made ahead of time and reheated gently.
