Description

Tender chicken bites coated in a crispy garlic herb butter crust, served with a rich and creamy sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • For the Creamy Sauce:
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine flour, salt, pepper, and paprika.
  3. In another shallow dish, whisk the eggs.
  4. In a third shallow dish, combine panko breadcrumbs, Parmesan cheese, parsley, and thyme.
  5. Dredge each chicken piece first in the flour mixture, then dip in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.
  6. Place the coated chicken pieces on the prepared baking sheet.
  7. In a small bowl, whisk together the melted butter and olive oil. Drizzle this mixture evenly over the chicken bites.
  8. Bake for 18-20 minutes, or until the chicken is golden brown and cooked through.
  9. While the chicken bakes, prepare the sauce. Melt 2 tablespoons of butter in a skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  10. Pour in the heavy cream and chicken broth. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until slightly thickened.
  11. Stir in 1/4 cup of Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  12. Serve the crispy chicken bites immediately with the creamy sauce for dipping.

Notes

  • For extra crispy chicken, you can pan-fry the bites before baking.
  • Feel free to add other herbs like rosemary or chives to the breadcrumb mixture.
