Simple and delicious zucchini fritters that are crispy on the outside and tender on the inside.
Ingredients

- 2 cups grated zucchini, squeezed dry
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- In a large bowl, combine the grated zucchini, flour, beaten eggs, parsley, minced garlic, salt, and pepper. Mix well until all ingredients are incorporated.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the skillet.
- Fry for 3-4 minutes per side, or until golden brown and crispy.
- Remove the fritters from the skillet and drain them on a paper towel-lined plate.
- Serve hot.
Notes
- Serve with sour cream, yogurt, or your favorite dipping sauce.
- For extra crispiness, ensure you squeeze as much moisture as possible from the grated zucchini.
