- 2 medium zucchinis, trimmed and cut into 1/2-inch thick sticks
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, place the flour. In another shallow dish, beat the eggs. In a third shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
- Dip each zucchini stick first into the flour, shaking off any excess. Then, dip it into the beaten eggs, ensuring it’s fully coated. Finally, dredge it in the breadcrumb mixture, pressing gently to help the crumbs adhere.
- Place the coated zucchini sticks in a single layer on the prepared baking sheet.
- Lightly spray the zucchini fries with olive oil.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.

- For extra crispiness, you can bake them for a few extra minutes.
