Description

A simple recipe for rich and creamy shrimp fettuccine pasta.


Ingredients

  • 1 pound fettuccine pasta
  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the fettuccine according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, season the shrimp lightly with salt and pepper.
  3. Heat the olive oil and butter in a large skillet over medium heat.
  4. Add the minced garlic and cook for 1 minute until fragrant. Do not let it brown.
  5. Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  6. Pour the white wine (if using) into the skillet and let it simmer for 1 minute, scraping up any browned bits.
  7. Reduce the heat to low. Pour in the heavy cream and bring to a gentle simmer. Cook for 2 minutes until slightly thickened.
  8. Stir in the Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
  9. Return the cooked shrimp to the skillet. Season the sauce with salt and pepper to taste.
  10. Add the drained fettuccine to the skillet and toss everything together until the pasta is well coated.
  11. Serve immediately, garnished with fresh parsley.

Notes

  • You can substitute chicken broth for white wine if you prefer not to use alcohol.
  • For extra flavor, add a pinch of red pepper flakes with the garlic.
