Ingredients

- 1 pound Italian sausage
- 1 large onion, chopped
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 pound potatoes, peeled and diced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Brown Italian sausage in a large pot over medium heat. Drain excess fat.
- Add chopped onion and cook until softened.
- Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and Parmesan cheese. Cook until heated through.
- Add fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can substitute kale for spinach.
- Adjust the amount of red pepper flakes for desired spice level.
