Ingredients

  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound potatoes, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Brown Italian sausage in a large pot over medium heat. Drain excess fat.
  2. Add chopped onion and cook until softened.
  3. Stir in minced garlic and cook for 1 minute.
  4. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and Parmesan cheese. Cook until heated through.
  6. Add fresh spinach and cook until wilted.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • You can substitute kale for spinach.
