- 1 pound mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add mushrooms and onion, cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in broth and bring to a simmer.
- Reduce heat and let simmer for 15 minutes.
- Stir in heavy cream.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker soup, you can blend half of the soup before adding the cream.
