Description
Ground chicken meatballs cooked in a rich, creamy mushroom sauce.

- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- In a bowl, combine ground chicken, breadcrumbs, milk, egg, Parmesan cheese, salt, and pepper. Mix gently until just combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides. Remove meatballs and set aside.
- Add sliced mushrooms and chopped onion to the same skillet. Cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in heavy cream. Return the meatballs to the skillet.
- Simmer gently for 10-12 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.
- Stir in fresh parsley before serving.
Notes
- You can substitute ground turkey for ground chicken.
- Serve these meatballs over pasta, rice, or mashed potatoes.
