Creamy Chicken Pasta with White Wine Parmesan Sauce

Description

A rich and flavorful pasta dish featuring tender chicken and a creamy white wine and Parmesan sauce.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces pasta (fettuccine, linguine, or penne)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, season chicken pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  5. Pour in white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly reduced.
  6. Stir in heavy cream and bring to a gentle simmer. Cook for 5-7 minutes, stirring occasionally, until the sauce thickens.
  7. Reduce heat to low. Stir in Parmesan cheese until melted and smooth.
  8. Return chicken to the skillet. Add cooked pasta and toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  9. Stir in fresh parsley. Season with salt and pepper to taste.
  10. Serve immediately.

Notes

  • For a richer sauce, you can add a tablespoon of butter along with the Parmesan cheese.
  • Feel free to add other vegetables like spinach or mushrooms to the sauce.
