Description
A rich and flavorful pasta dish featuring tender chicken and a creamy white wine and Parmesan sauce.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces pasta (fettuccine, linguine, or penne)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Pour in white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly reduced.
- Stir in heavy cream and bring to a gentle simmer. Cook for 5-7 minutes, stirring occasionally, until the sauce thickens.
- Reduce heat to low. Stir in Parmesan cheese until melted and smooth.
- Return chicken to the skillet. Add cooked pasta and toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve immediately.
Notes
- For a richer sauce, you can add a tablespoon of butter along with the Parmesan cheese.
- Feel free to add other vegetables like spinach or mushrooms to the sauce.
