Description

A straightforward recipe for smooth, rich carrot soup.


Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1.5 lbs carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add carrots and vegetable broth to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer until carrots are very tender, about 20 minutes.
  6. Remove the pot from the heat.
  7. Carefully blend the soup using an immersion blender until smooth, or transfer in batches to a standard blender.
  8. Return the soup to the pot if necessary. Stir in the heavy cream, salt, and pepper.
  9. Heat gently until warmed through. Do not boil after adding cream.
  10. Serve immediately.

Notes

  • For a dairy-free option, substitute the heavy cream with full-fat coconut milk.
  • Taste and adjust salt and pepper before serving.
