- 2 large chicken breasts, cooked and chopped
- 4 slices bacon, cooked and crumbled
- 2 hard-boiled eggs, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup crumbled blue cheese
- 1/2 cup shredded Swiss cheese
- 4 cups mixed greens (romaine, iceberg)
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Prepare a simple vinaigrette by whisking together red wine vinegar, olive oil, Dijon mustard, salt, and pepper.
- Arrange the mixed greens on a large platter or in individual bowls as a base layer.
- Arrange the remaining ingredients in neat rows over the greens: chicken, bacon, eggs, tomatoes, avocado, blue cheese, and Swiss cheese.
- Drizzle the vinaigrette over the salad just before serving.
Notes
- You can substitute grilled turkey for chicken.
- For a crispier bacon, cook it slowly over medium heat.
