Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt for the muffin batter.
- In a separate bowl, mix the melted butter, egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Prepare the streusel: In a small bowl, combine the streusel flour, brown sugar, and cinnamon. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Fill the muffin cups about two-thirds full with batter.
- Sprinkle the streusel topping evenly over the top of the batter in each cup.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Do not overmix the batter; a few lumps are fine.
- For a more even bake, let the batter rest for 5 minutes before filling the cups.
- You can substitute whole milk with buttermilk for a slightly tangier flavor.
