- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup unsalted butter, melted (for filling)
- 1 cup packed brown sugar (for filling)
- 2 tablespoons ground cinnamon (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- For the filling, mix the melted butter, brown sugar, and cinnamon in a small bowl.
- Divide the cookie dough in half. Roll one half into a rectangle about 1/4 inch thick. Spread half of the cinnamon filling evenly over the dough.
- Roll the dough tightly into a log. Repeat with the second half of the dough and filling.
- Wrap each log tightly in plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 350°F (175°C). Slice each chilled log into 1/2-inch thick rounds. Place rounds on prepared baking sheets, leaving space between them.
- Bake for 10 to 12 minutes, or until the edges are lightly set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
Notes
- Chill the dough logs completely for easier slicing.
