- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup hot water
- 8 ounces semi-sweet chocolate, chopped
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Carefully stir in the hot water until the batter is smooth. The batter will be thin.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.
- While the cupcakes cool, prepare the ganache. Place the chopped chocolate in a heatproof bowl.
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.
- Pour the hot cream over the chopped chocolate. Let it sit for 5 minutes, then whisk until smooth and glossy.
- Let the ganache cool at room temperature until it reaches a spreadable consistency.
- Once the cupcakes are completely cool, frost them with the chocolate ganache.
Notes
- For a richer ganache, use dark chocolate.
- Ensure your cupcakes are completely cool before frosting to prevent the ganache from melting.
