Ingredients

  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. Add the milk, oil, and vanilla extract to the dry ingredients. Mix until just combined; do not overmix.
  4. Pour the batter into the prepared baking dish. Sprinkle the chocolate chips evenly over the top of the batter.
  5. Carefully pour the 1 cup of boiling water over the chocolate chips and batter. The batter will float on top of the water.
  6. Bake for 35 to 40 minutes, or until the top is set and firm.
  7. Let the cobbler cool slightly before serving.
