Description

A straightforward recipe for a refreshing chickpea salad.


Ingredients

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the rinsed and drained chickpeas in a medium bowl.
  2. Mash about half of the chickpeas with a fork until mostly broken down. Leave the remaining half whole for texture.
  3. Add the chopped celery and red onion to the bowl.
  4. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice.
  5. Pour the dressing over the chickpea mixture.
  6. Stir everything together until well combined.
  7. Season with salt and pepper to your preference.
  8. Serve immediately or chill before serving.

Notes

  • For a different flavor, substitute plain Greek yogurt for half of the mayonnaise.
  • You can add 1/4 cup of chopped fresh dill or parsley for extra flavor.
  • Serve the salad on bread, crackers, or over lettuce.
