Description

A basic recipe for cooking chicken in a tomato-based sauce.


Ingredients

  • 1 lb chicken breasts, cut into pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  3. Add onion to the skillet and cook until soft, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, chicken broth, oregano, salt, and pepper. Bring the mixture to a simmer.
  6. Return the chicken to the skillet. Reduce heat to low, cover, and let it simmer for 15 minutes, or until the chicken is cooked through.
  7. Serve hot.

Notes

  • You can add fresh basil at the end for extra flavor.
