Description
A basic recipe for cooking chicken in a tomato-based sauce.
Ingredients

- 1 lb chicken breasts, cut into pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
- Add onion to the skillet and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, chicken broth, oregano, salt, and pepper. Bring the mixture to a simmer.
- Return the chicken to the skillet. Reduce heat to low, cover, and let it simmer for 15 minutes, or until the chicken is cooked through.
- Serve hot.
Notes
- You can add fresh basil at the end for extra flavor.
- Serve this sauce over pasta or rice.
