- 2 medium zucchinis, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup breadcrumbs
- 2 tablespoons butter, melted
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the sliced zucchini in a single layer in a baking dish.
- In a small bowl, mix together the cheddar cheese, Monterey Jack cheese, breadcrumbs, melted butter, garlic powder, salt, and pepper.
- Sprinkle the cheese mixture evenly over the zucchini.
- Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
- You can add other vegetables like chopped onions or bell peppers.
- For extra flavor, add a pinch of red pepper flakes.
- Serve hot as a side dish.
