Description

A simple one-pan meal featuring ground beef, pasta, and a cheesy sauce.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 8 ounces elbow macaroni or small pasta shape
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the diced tomatoes (with juice) and beef broth. Add the Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  5. Stir in the dry pasta. Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  6. Remove the skillet from the heat. Stir in the cheddar cheese and mozzarella cheese until melted and creamy.
  7. Serve immediately.

Notes

  • You can substitute ground turkey or ground sausage for the ground beef.
  • For a richer flavor, use tomato sauce instead of diced tomatoes.
  • Stir in a handful of frozen peas during the last 5 minutes of cooking for added vegetables.
