Description

Ingredients

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 2 ripe bananas, sliced
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease the paper.
  2. In a large bowl, beat the eggs and granulated sugar with an electric mixer until thick and pale, about 5 minutes.
  3. Gently fold in the flour, vanilla extract, and salt until just combined. Do not overmix.
  4. Spread the batter evenly into the prepared pan.
  5. Bake for 10 to 12 minutes, or until the cake springs back when lightly touched.
  6. While the cake bakes, lay a clean kitchen towel on your counter and dust it lightly with powdered sugar.
  7. Immediately invert the hot cake onto the sugared towel. Peel off the parchment paper.
  8. Starting from a short end, roll the cake and towel together tightly. Let it cool completely in this rolled position on a wire rack.
  9. In a clean bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  10. Carefully unroll the cooled cake. Spread the whipped cream evenly over the cake surface, leaving a small border.
  11. Arrange the sliced bananas over the whipped cream.
  12. Reroll the cake gently without the towel.
  13. Place the roll on a serving platter. Drizzle the top with caramel sauce before slicing and serving.

Notes

  • For easier rolling, you can dust the parchment paper instead of the towel with powdered sugar before baking.
  • Chill the cake roll for at least 30 minutes before slicing for cleaner cuts.
