A simple and delicious coffee cake made with a cake mix.

- 1 box (15.25 oz) yellow cake mix
- 1 cup sour cream
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- For the Streusel Topping:
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the cake mix, sour cream, vegetable oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed until well combined, about 2 minutes.
- Pour half of the batter into the prepared baking pan.
- In a separate medium bowl, prepare the streusel topping. Combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Sprinkle half of the streusel topping over the batter in the pan.
- Pour the remaining batter over the streusel layer.
- Sprinkle the remaining streusel topping evenly over the top of the cake.
- Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- You can add chopped nuts like pecans or walnuts to the streusel topping for extra crunch.
