  • 3/4 cup fresh or frozen blueberries
  • 1/2 cup heavy cream, plus extra for brushing
  • 1 large egg

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gently stir in the blueberries.
  5. In a small bowl, whisk together the heavy cream and egg. Pour this mixture into the dry ingredients. Mix just until a shaggy dough forms. Do not overmix.
  6. Turn the dough out onto a lightly floured surface. Gently pat or roll the dough into a 3/4-inch thick circle or square.
