Simple Black Rice Salad

Description

A straightforward salad featuring cooked black rice, fresh vegetables, and a light dressing.


Ingredients

  • 1 cup black rice
  • 2 cups water
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped red onion
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the black rice under cold water.
  2. Combine rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes or until water is absorbed.
  3. Remove rice from heat and let it stand, covered, for 10 minutes. Fluff with a fork and let it cool completely.
  4. In a medium bowl, combine the cooled black rice, cucumber, bell pepper, and red onion.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  6. Pour the dressing over the rice mixture and toss gently to coat all ingredients.
  7. Serve immediately or chill before serving.

Notes

  • You can add cooked, cooled shrimp or black beans for extra protein.
  • Substitute lime juice for lemon juice if preferred.
