A recipe for a classic, fresh strawberry pie with a simple crust and sweet glaze.

- 1 (9 inch) unbaked pie crust
- 6 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/2 cup water
- 1/4 cup lemon juice
- 1 tablespoon butter
- 1/4 teaspoon salt
- Red food coloring (optional)
Instructions
- Prebake the pie crust according to package directions until lightly golden. Let cool completely.
- In a medium saucepan, combine the sugar and cornstarch. Stir well.
- Gradually whisk in the water until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for 1 minute.
- Remove from heat. Stir in the lemon juice, butter, and salt until the butter melts. If desired, add a drop or two of red food coloring for a brighter color.
- Let the glaze cool for about 15 minutes, stirring occasionally. It should still be pourable but slightly thickened.
- Arrange the sliced strawberries evenly in the cooled pie crust.
- Pour the cooled glaze over the strawberries, making sure to coat them evenly.
- Refrigerate the pie for at least 4 hours, or until the glaze is completely set.
Notes
- Use firm, ripe strawberries for the best flavor and texture.
- You can substitute a pre-made graham cracker crust if you prefer.
