- 5 oz fresh spinach
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts or pecans
- 1/4 cup olive oil
- 2 tablespoons raspberry vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Wash and dry the spinach and berries.
- In a large bowl, combine the spinach, mixed berries, goat cheese, and nuts.
- In a small bowl, whisk together the olive oil, raspberry vinegar, Dijon mustard, and honey/maple syrup.
- Season the vinaigrette with salt and pepper to your liking.
- Pour the vinaigrette over the salad.
- Toss gently to coat all ingredients.
- Serve immediately.

- For a crunchier salad, toast the nuts before adding them.
- You can substitute feta cheese for goat cheese if preferred.
