Banana Cream Cheesecake

Description

A rich, creamy cheesecake topped with fresh bananas and whipped cream.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan.
  3. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually beat in 1 1/2 cups sugar and vanilla extract.
  5. Beat in the eggs one at a time, mixing well after each addition. Stir in the sour cream until just combined.
  6. Pour half of the cream cheese mixture over the crust. Arrange half of the sliced bananas over the filling. Pour the remaining cream cheese mixture over the bananas.
  7. Place the springform pan in a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
  8. Bake for 55 to 65 minutes, or until the center is mostly set. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  9. Remove the cheesecake from the water bath and let it cool completely on a wire rack. Chill in the refrigerator for at least 6 hours, or preferably overnight.
  10. Before serving, whip the heavy cream with powdered sugar until stiff peaks form. Top the chilled cheesecake with the whipped cream and the remaining banana slices.

Notes

  • For the water bath, use very hot tap water to speed up the process.
  • Do not overmix the batter once the eggs are added to prevent cracking.
  • Chill the cheesecake thoroughly for the best texture and slicing.
