  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • For the Streusel:
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup (1/2 stick) cold unsalted butter, cut into pieces
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round baking pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a small bowl, combine mashed bananas and sour cream.
  6. Add the dry ingredients to the wet ingredients alternately with the banana-sour cream mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Prepare the streusel: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Spread half of the batter into the prepared pan. Sprinkle half of the streusel over the batter. Spoon the remaining batter over the streusel. Top with the remaining streusel.
  9. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. Prepare the glaze: Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
