Description

A moist chocolate cake soaked with a Baileys Irish Cream glaze and topped with whipped cream.


Ingredients

  • 1 box (15.25 oz) chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/2 cup Baileys Irish Cream liqueur (for soaking)
  • 1/4 cup Baileys Irish Cream liqueur (for glaze)
  • 1/2 cup powdered sugar (for glaze)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for topping)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the cake mix according to package directions, substituting the required water with 1 cup of water. Mix in the vegetable oil and eggs.
  3. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Remove the cake from the oven. While the cake is still warm, use the handle of a wooden spoon or a large fork to poke holes all over the top, about 1 inch apart.
  5. In a small bowl, mix the 1/2 cup Baileys Irish Cream liqueur with the 1/4 cup Baileys Irish Cream liqueur and pour this mixture slowly over the entire top of the warm cake, allowing it to soak into the holes. Let the cake cool completely.
  6. Prepare the glaze: Whisk together the 1/2 cup powdered sugar and 1/4 cup Baileys Irish Cream liqueur until smooth. Drizzle this glaze over the cooled cake.
  7. Prepare the topping: In a separate bowl, beat the heavy whipping cream, 2 tablespoons of powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the cake.
  8. Chill the cake for at least 1 hour before slicing and serving.

Notes

  • You can substitute milk for the water in the cake mix if you prefer a richer flavor.
  • For an extra chocolate flavor, you can fold 1/2 cup of chocolate chips into the batter before baking.
