Ingredients

- 1 cup orzo pasta
- 1 large ripe avocado, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Cook orzo pasta according to package directions. Drain and rinse with cold water to cool it down.
- In a small bowl, whisk together the olive oil, lemon juice, and Dijon mustard for the dressing. Season with salt and pepper.
- In a large bowl, combine the cooled orzo, diced avocado, crumbled feta cheese, red onion, and parsley.
- Pour the dressing over the salad ingredients.
- Gently toss everything together until well combined.
- Taste and adjust seasoning if needed before serving.
Notes
- You can add cherry tomatoes for extra color and flavor.
- For a tangier dressing, use fresh lime juice instead of lemon juice.
- Chill the salad for at least 15 minutes before serving for better flavor melding.
