Description

Simple recipe for crispy zucchini and corn fritters made in an air fryer.


Ingredients

  • 1 medium zucchini, grated and squeezed dry
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. In a medium bowl, combine the squeezed zucchini, corn kernels, flour, beaten egg, Parmesan cheese, salt, and pepper. Mix until just combined. Do not overmix.
  2. Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray.
  3. Form the mixture into small patties, about 2 inches wide and 1/2 inch thick. You should get about 8 to 10 fritters.
  4. Place the fritters in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook in batches.
  5. Lightly spray the tops of the fritters with cooking spray.
  6. Air fry for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
  7. Remove from the air fryer and serve warm.

Notes

  • Squeezing the moisture out of the grated zucchini is important for crispy fritters.
  • Serve with a side of sour cream or Greek yogurt mixed with herbs for dipping.
