Simple recipe for crispy zucchini and corn fritters made in an air fryer.
Ingredients

- 1 medium zucchini, grated and squeezed dry
- 1 cup corn kernels (fresh or frozen, thawed)
- 1/2 cup all-purpose flour
- 1 large egg, lightly beaten
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- In a medium bowl, combine the squeezed zucchini, corn kernels, flour, beaten egg, Parmesan cheese, salt, and pepper. Mix until just combined. Do not overmix.
- Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray.
- Form the mixture into small patties, about 2 inches wide and 1/2 inch thick. You should get about 8 to 10 fritters.
- Place the fritters in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook in batches.
- Lightly spray the tops of the fritters with cooking spray.
- Air fry for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
- Remove from the air fryer and serve warm.
Notes
- Squeezing the moisture out of the grated zucchini is important for crispy fritters.
- Serve with a side of sour cream or Greek yogurt mixed with herbs for dipping.
