Description
Crispy avocado fries made quickly in an air fryer.
Ingredients

- 2 firm avocados
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Cut the avocados into thick fry shapes, about 1/2 inch thick. Peel the skin off carefully.
- Set up a dredging station with three shallow dishes. Place flour in the first dish.
- Place beaten eggs in the second dish.
- Mix breadcrumbs, salt, and pepper in the third dish.
- Dredge each avocado piece first in the flour, shaking off excess.
- Dip the floured avocado into the egg mixture, letting excess drip off.
- Coat thoroughly in the breadcrumb mixture, pressing gently to adhere.
- Arrange the coated avocado fries in a single layer in the air fryer basket. Do not overlap.
- Lightly spray the tops with cooking spray.
- Air fry at 380F (195C) for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.
- Spray the second side lightly with cooking spray before flipping.
- Serve immediately.
Notes
- Use firm, not overly ripe, avocados for best results.
- Serve with your favorite dipping sauce, like lime crema or sriracha mayo.
